The Blahs

Just a quickie to reassure you that I am still here and still doing well. I am just tired as hell and lack the imagination to come up with an entry today. I have this big list of Things To Write About On Dietgirl but I cannae be arsed today!
I went to the gym three times last week and ate very well so it's all going very well. Feeling very motivated in that department. It's just the rest of my life I'm ever so slightly stressed about. The Future and other family thingies. It's just over four tiny wee months now til I get booted out of Britain. I am starting to get antsy. Tearful goodbyes or trying to organise a wedding in a week? Who knows?
So, anyway. Until I feel more energetic here's a small list of Things To Do With Quinoa.
Cook half a cup or so in water or vegetable stock according to the packet directions then toss with any of these combinations:
- Diced cucumber, diced spanish (red) onion and crumbled feta cheese
- Oven-roasted mushrooms, chunks of butternut squash (pumpkin) and zucchini (courgette), topping with a tiny sprinkle of parmesan if you're game
- Steamed broccoli florets, chopped cooked chicken breast, dollop of green pesto and juice of half a lemon
- Oven-roasted onions, green and red peppers and cherry tomatoes plus a handful of black olives
All good served hot or cold, always add heaps of freshly ground black pepper.
Oh! Almost forgot. A few people asked if the Scottish Companion discovered the site after I just about flashed it in his face. It seems he has not, bless his daydreamy unobservant soul!

I don't know if your package directions mention toasting the quinoa first, but a coworker suggested it to me when I mentioned that I didn't like the taste (it tastes sort of bitter to me). She says the toasting gives it a much better flavor. I think she said to saute in in the pan until browned before adding the liquid. I haven't tried it yet, but plan to soon.

Well thanks DG you've just given me a weeks's worth of lunch ideas. Now to get my grubby mitts on some of that there Quinoa...
And please don't stress so much about The Future that you forget about enjoying The Right Now. Things usually have a funny way of working out. Easy to say, I know ;)

My Quinoa Queen! You love this don't you? I do too, I was so thrilled when I first tried it (thanks to Juju!) But all your combinations sound so yummy, I will have to try them all soon!!! And lemon juice with pesto...now that is new to me...and I can feel it in my taste buds already!!!

mmm 1,3 & 4 sound delicious and ive never even had quinoa before. maybe its about time!! Good to hear you are doing so well... as for wedding in a week, the townhall can take care of that. we did the townhall thing and will have a big white wedding (we plan on it anyway) on our 10yr anniversary. dont stress too much about it k? you will figure everything out :)

DG. I'm a fellow antipodean over here. A friend of mine bought some extra time here (six months to be exact). This is how she did it. She applied for the Highly Skilled Migrant Visa program, knowing that she didn't qualify. Basically though they can't kick you out while your application is being considered and they have such a backlog of applications it is taking 6 months. While I wouldn't normally suggest stuffing around with government systems I reckon that sometimes you need to do what you need to do and it's not illegal. So if you need some desperate measures to give you time while you figure it out this could be an option...

I like Liv's idea, but I'm with Kimba on this one. These things do have a way of working themselves out. Don't worry so much about the future that you can't enjoy the present with him.

Yes, best of luck with that (I'm temporarily severed from my own lovely chap so you have my sympathy.)
On a less sombre note, where can I get quinoa? Do they have it in Tesco?

Thanks for the quinoa tips. I used it while doing Carol Vorderman's Detox last year and since then it has been in the back of the cupboard. I might need to invest in a new box if the bets by date has passed though.
Kirsten - not sure if Tescos will have it - maybe the huge superstores? But it is definitely available in Holland and Barrett and other health food shops.
Noticed on your other site that you've been down to London. About time too!

"The Blahs" has to do with cold and dark, right? It's sometimes so hard to be creative and cheerful when the world seems to have closed down (lights off...) -Have to say that your posts are one candle in the winter - thanks for being there!

I love quinoa, even though it ain't as popular as other foods, but it tastes amazing. We sometimes just boil it and put some spices in it and Enjoy it either by itself or with some other side dish of salad or meat. Anyway, quinoa is very healthy and tastes amazing :)
